Christie Brinkley looks amazing at age 63 – and she recently showed off her killer bod in Sports Illustrated! But in order to keep trim, Christie is definitely not just relying on good genes. Here’s what she eats – from Daily Mail:

Largely vegan since reading about dubious slaughterhouse practices aged 12, size 8 Christie has been following a low-sugar, no-dairy, clean-eating diet. It’s a regime that would make even the most disciplined of women wince.

Breakfast is a sheep’s milk yoghurt with organic berries, chia seeds and raw oatmeal. Plus, she eats an apple 20 minutes before meals to leave her feeling fuller and therefore less likely to overindulge.

Lunch is a salad and her afternoon snack a kale, lime, orange and avocado juice made by the private chef Christie describes as ‘her great luxury in life’.

If she’s still feeling peckish, she indulges in a homemade pumpkin-seed mix sprinkled with Himalayan salt, before eating brown rice with roasted red and yellow peppers and dried fennel for dinner. To ensure she and her family get an abundance of health-boosting vitamins, Brinkley attempts to include as many colours of foods as possible in her diet.

As wacky as her approach might sound, many experts believe those brightest in colour — such as tomatoes and red peppers — are highest in cancer-preventing antioxidants.

‘For many, many, many years I’ve always said I go for as many colours as possible,’ says Christie, who is currently single. ‘That’s my main concept for making sure my kids get all the nutrients — making sure they get the deep greens, yellows and reds and purples.’

Aware that too much sugar can disrupt collagen levels in the skin, potentially causing wrinkles, she crushes blueberries in a blender to ‘taste like you’re indulging in ice cream’.

Well, that 27in waist won’t whittle away on its own, eh?

Fortunately, Christie isn’t completely saintly on the culinary front. Indulgences include a glass of red wine with dinner and a daily piece of organic dark chocolate.

Plus, she claims with uncharacteristic abandon: ‘Life is too short to not have oysters and champagne sometimes.’

Ashley Graham finally scored the cover of American Vogue – a shared covered, that is. The size 14 beauty posed together with six straight size models: Kendall Jenner, Gigi Hadid, Liu Wen, Ashley, Kendall Jenner, Gigi Hadid, Imaan Hammam, Adwoa Aboah and Vittoria Ceretti.

As soon as the cover was released, various outlets started to point out the marks Photoshop has left on the image – from Ashley looking slimmer than in reality to Gigi’s freaky extended arm.

On why she loves her body:

“I love my shape because I know what it’s capable of—running 13 miles, having two children, and learning to surf. I love my body so much; it’s profoundly amazing. I have enormous gratitude for it.”

On the food she doesn’t like and her daily meal plan:

“I have never liked fruit. To make up for it, I have a green juice every morning, which is totally devoid of fruit but has tons of vitamins from vegetables. A typical day of eating for me is eggs or oatmeal for breakfast, soup or salad for lunch, and fish or meat and lots of veggies for dinner.”

On her biggest craving:

“I don’t have a sweet tooth; I have a savory tooth. There are six or seven cheese in my fridge at all times. My idea of snacking is putting cheeses on a platter with prosciutto and crackers and sitting in front of it and stuffing my face.”

On how she sets an example of positive body image for her daughter:

“When I’m not shooting, I aim to work out at least three times a week … On shoot days, I start at about five in the morning and don’t get home until seven at night, so it’s hard to find time for exercise. I throw myself a bone and don’t get too worried about it. I know that when I have time again, I can kick it up a notch. I also need to be an example for my daughter. That means I can’t run around worried about what I look like. We’re active together as a family—the kids go hiking and biking with us. But I don’t obsess about what I eat.”

On why she needs exercise in her life:

“I get crabby when I don’t work out. Just ask my husband! [Laughs.] I really depend on exercising to relieve stress. Last week, I was overwhelmed and I thought, I need to go for a run or a hike to clear my head. I had a to-do list that was a mile long, and I didn’t know what to tackle first. When I run, it helps put everything into place. Years ago, when I started working out, it was about getting my body in shape. But now the mental benefits outweigh the physical ones. That’s why I love going for a hike in the morning. There’s something about climbing a mountain that’s symbolic—you set your intention and what you want to focus on. I think about what I have to do today or what I have to accomplish this week. It allows me that space where there’s no one else around.”

On running:

“I run a half marathon every year with Maria, my best friend from my hometown in Iowa. I’ve known her since I was a kid. We usually do races in different cities, so we’ll make a weekend out of it. It’s great because there are days when I have to do an eight-mile run, and I’ll get a text from Maria saying, ‘I did eight miles! Did you do yours?’ Training with her helps motivate and encourage me.”

“I’d be getting maybe two auditions a year, and I’d always see the same small group of girls,” says Metz, who was a size 12 when she was first scouted but dropped 50 lbs. at the recommendation of her then-manager before moving to L.A.

With work slow, she took a job as a junior commercial casting agent but says having to backburner her own dreams “was like watching your boyfriend take another woman out every day.”

Depressed and “eating my feelings,” Metz gained more than 100 lbs. before a panic attack on her 30th birthday sent her to the hospital and snapped her back into reality.

She set about overhauling herself physically and emotionally, including following doctor’s orders to lose weight. “I was so gung ho, I lost 100 lbs. in less than five months,” she says. “All I did was eat a 2,000-calorie diet and walk 20 minutes a day.”

As the numbers on the scale fell, Metz regained confidence. Then she landed the recurring part on American Horror Story: Freak Show that would kick-start her career.

Playing a “fat lady” meant stepping into a fat suit. “It was sobering,” she says. “I thought, ‘What if I become that heavy and can’t walk around or get stuck in the doorframe? I was like, ‘I don’t want this for me.’ ”

The role also lead her to This Is Us. Baring her body and stepping on a scale within the first few minutes of the show’s pilot this past September, Metz — through her character — Kate instantly instantly became a fan-favorite.

“You don’t realize that somebody who’s average or even very fit could relate to someone who’s overweight,” she says of the feedback she’s gotten, “but it’s not about our size — it’s how we look at ourselves and how we feel about ourselves.”

As for what’s next, while Metz says she’s taking steps to lose weight, she does make it clear that the stops along her weight loss journey are “not for anybody but myself. … I want to have a fit, healthy body and not have to be put in a box. I don’t want to be limited by anything.”
